Michelin-starred chef Michael Wignall added to Hospitality Exchange menu

Multiple Michelin-starred chef Michael Wignall will be the guest chef at this year’s Hospitality Exchange 2021.

The event has been a highlight of the tourism and hospitality industry calendar for the last two decades and the inclusion of the man behind the Angel at Hetton only adds to an already exciting programme for the conference, which will take place in the Crowne Plaza on the 12th and 13th October.

Breaking the news, NIHF President Stephen Meldrum, below, said: “We are delighted to have such an exciting chef with us for 2021. Michael has a wealth of experience and he is keen to give delegates an insight into his own culinary journey which has been peppered with Michelin stars and AA rosettes.

“The last 18 months have been very challenging for the industry and we are looking forward to staging Hospitality Exchange as a live event. The conference will of course comply with any safety measures required but we are looking forward to welcoming delegates to the Crowne Plaza for an exciting programme that is reflective of relevant industry issues.

“Michael will create a Gourmet Dinner as part of the programme and will also speak about his life in the kitchen and beyond. He will delve into the challenges the sector faces and his innovative approach to food. He has a very interesting back story and has used his extensive travels and a passion for freshly cooked food and multi-cultural cuisines to build a hugely successful career that has been recognised by industry bodies and, equally importantly, customers.”

Michael, who toyed with a career as a BMX biker, started at Broughton Park under Paul Heathcote, moving with him to his restaurant in Longbridge, Preston, which was followed by a spell working with John Burton Race at L’Ortolan. Following this he headed up Old Beams, Staffordshire, Waldo’s Restaurant in the Cliveden Hotel, Michael’s Nook and the Burlington Restaurant at The Devonshire Arms, earning a Michelin star in each.

His journey continued when he joined Exclusive Hotels in 2007 where, under his leadership, the Latymer became one of the top restaurants in the country gaining two Michelin stars by 2012. In 2016, he moved to Gidleigh Park, Chagford, attaining further accolades before taking up the reins at the Angel at Hetton in 2018 with his wife Johanna.

Speaking about the upcoming conference, Michael said: “It has been a challenging time for everyone over the last year and hopefully we are now on a road to recovery. I’m looking forward to coming to Belfast and having the opportunity to showcase the type of food that the Angel at Hetton is famed for. It will also be a great platform to speak to peers about common issues, challenges and thoughts for the future of the industry.”
