Culinary maestro Tom Booton to light up Hospitality Exchange 2023

The countdown has begun for Hospitality Exchange 2023, organised by the NI Hotels Federation, taking place this year on the 17th and 18th of October at the Crowne Plaza Belfast.

Hospitality Exchange has long been recognised as a leading platform for professionals in the hotel and hospitality industry to come together, share knowledge, and explore the latest trends and innovations. This year’s conference promises to be an exceptional experience, offering a lineup of influential speakers, engaging panel discussions, and exciting networking opportunities.

Adding to the allure this year, the renowned culinary maestro, Tom Booton, Executive Chef at The Grill at The Dorchester, has been announced as the guest chef for the event.

Recognised as one of the most talented young chefs in the UK, Tom started his career at 15 in La Talbooth, Dedham, honing his skills and rising through the ranks for five years. He came to London in 2013 and began working with Alyn Williams in his eponymous, Michelin starred restaurant at The Westbury. A two year stint at L’Autre Pied followed before Tom set off on his travels spending time in restaurants in Copenhagen, New York and Iceland. On his return to London, he joined Ollie Dabbous before returning as head chef to Alyn Williams at The Westbury. Heading up a young brigade, his career flourished with a reputation for creating interesting menus and his clever use of seasonal ingredients.

Tom will join the conference line-up speaking about his stellar career, culinary experiences and his ambition which has seen him win many industry accolades. In 2021, Tom won the Chef to Watch award at the National Restaurant Awards. The Grill has flourished under his leadership. It was awarded AA three-rosettes and named in the top 100 restaurants in Great Britain and the Hardens. In 2023, the Grill was renamed The Grill by Tom Booton, a testament to his talent and the start of a new culinary era in a renowned location.

There will also be an opportunity to experience Tom’s innovative cooking at a gourmet dinner on the eve of this year’s Hospitality Exchange in The Merchant Hotel.  The menu will include classic dishes with a twist incorporating local Northern Ireland ingredients.

Tom said: “I am looking forward to bringing our food to Northern Ireland in October for such an incredible event. Cooking with some of my most favourite ingredients, from Killough Bay oysters to Hannan Meats, it will be a night to remember.”
